Vegan Egg Nog Recipe
This is a yummy vegan egg nog
recipe for your next holiday or Christmas party.
In a blender place:
1 quart rice or almond milk (plain or vanilla)
1 cup almonds, walnuts or pecans
16 pitted dates (cut through them to make sure they are really pitted - sometimes they miss a pit!)
1 teaspoon freshly grated nutmeg*
Blend for a couple of minutes until very smooth. Chill well before serving.
*Whole nutmegs keep for years! I grate mine on the fine nubby part of my grater - the one that bumps up like someone drove nails in from behind to make it. Just hold the whole nutmeg and start rubbing the top or bottom on the grater, keeping your fingers a safe distance. Leftover pieces keep well in a baggie in the fridge, and can be used next year when you make this recipe. Or grate a little over steamed spinach throughout the year. Mmmmmmm.
