Hummus Recipe


Try our Hummus recipe at your next party, or as an appetizer or meal anytime!


How to make Hummus
(also spelled hamos, hommos, hommus, houmous, hummos, hummous or humus!)

Note: Our basic recipe uses canned chickpeas (garbanzo beans), but you could cook your own, if you prefer.

Hummus Ingredients:
1# can chickpeas, drained
juice of 1 fresh lemon
1-4 cloves fresh garlic, peeled
1/4 cup olive oil
1/3 cup sesame tahini
salt to taste

Directions:
Place chickpeas in large bowl of food processor. Add lemon juice (no seeds!), garlic, olive oil, and sesame tahini. Blend until smooth. Add salt to taste. Serve with triangles of pita, crackers, celery, and or carrot sticks. Mid-eastern or Greek olives make a good accompaniment. Optional: Sprinkle some paprika on top.


Variations
:

  • In place of lemon juice and olive oil, use Cardini's Lemon Herb Dressing - yummy!!
  • Don't have any sesame tahini and you're craving hummus? Substitute peanut butter - it sounds strange, but is surprisingly good!
  • Some people like cumin in their hummus. I don't, but mention it for those who may.
  • Serve with tortilla chips instead of pita.
  • Spoon a dollop of hummus into/onto a bite-size piece of romaine lettuce. Roll, fold or just pop it in your mouth! Repeat until satisfied...
  • My favorite crackers for scooping hummus: Multi-Grain Wheat Thins.

  • This is an easy and inexpensive appetizer, and if you have any vegans at your party, they may be very happy to see it!
  • Other mid-eastern fare includes falafel, tabouli (tabouleh), couscous (we love Near East Mediterranean Curry Couscous!) moussaka, dolmas, kebabs, baba ganoush, feta, and baklava.
  • For a truly delicious sandwich into each half of a pita put a couple of falafel, gently smushed, a couple tablespoons of hummus, lettuce and or sprouts, and some Annie's Naturals Goddess Dressing. Add some tabouli on the side and enjoy your feast!
  • Never ate hummus before? You can usually order it at Mid-eastern and Greek restaurants, and most supermarkets carry a brand or two in their deli section. My favorite is Sabra Greek Olive Hummus which has a creamier texture than most commercial or home made hummus. Tribe of Two Sheiks' Forty Spices Hummus is another favorite.
